Meal Plan Monday 8/15

Looking for dinner inspiration or to brag about your tasty meals? Post below!

Here's my meal plans for the week:
Monday: Chicken, Mashed Potatoes, Stuffing 
Tuesday: Eggplant Parmesan with Zucchini noodles
Wednesday: Smoky kale ribolita
Thursday: Out of town, eating out
Friday: Halibut with fennel and white beans

We're also freezing half of the stuffing from tonight to see if it stays yummy and try again in a month of so. If it works, then I'll make more for Thanksgiving this year! Anyone else starting to think about freezer meals for once babies are here?

  • My husband put all the meals on his phone for the week, so let's see if I can remember.... And our week nights have been so jacked with school starting next week so who knows if we'll be able to stick to this

    Monday: crispy oven chicken thighs, broccoli, fried potatoes, and salad ? 
    Tuesday: hamburger helper
    wednesday: Shake n bake chicken that we never made last week, green beans
    thursday: sandwiches
    Friday: leaving it open for whatever

    Definitely thinking of freezer meals but also concerned with having freezer space... So I guess we need to eat our way through the freezer first

  • Monday: Pav Bahji (Made in India cookbook)
    Tuesday: Unsure, I'm going to see Bad Moms with a friend at 7:15 so we may get our families together for dinner at one of our homes first
    Wednesday: Salmon, Green beans
    Thursday: Our anniversary so we might go out to eat
    Friday: Probably some kind of big salad since it's supposed to be hot out and we won't want to cook

    Our freezer is tight on space so I would love to do freezer meals, but I don't know if we're going to be able to because of space problems. We've debated getting an ice chest for the garage, but haven't decided if we want to spend the money on it.
  • Monday: chicken stir fry
    Tuesday: tacos
    Wedneaday: meatball subs
    Thursday: Shake and bake tenders on salad
    Friday: chicken alfredo 

    sat & sun: grill 

    I have 15 freezer meals I plan to make. My mom is comin to stay with us the month the baby comes, so I'm guessing she'll cook I'm November and we'll use the freezer meals for December. 
  • Monday:  DH is working so I will have leftovers from yesterday
    Tuesday:  Chicken and Rice with Broccoli
    Wednesday:  Tacos
    Thursday:  Friends get into town, we're picking them at the airport so might get pizza on the way home
    Friday:  We will probably eat out
  • I'm working 12+ hour days all week + Saturday, so I did a lot of meal prep yesterday. 

    Monday: Baked spaghetti with garlic bread & salad

    Tuesday: Turkey/bacon/avocado sandwiches with corn on the cob and cantaloupe 

    Wednesday: Hasselback zucchini with rice

    Thursday: Burrito casserole with jalepeno poppers & salad

    Friday: Burgers with corn on the cob & pasta salad

  • I took a whole weekend before DS was born and made a ton of freezer meals for the deep freeze. Our deep freeze was filled with freezer meals and breast milk. It was a necessary purchase. Freezer meals were a lifesaver and I intend to make another batch this time around.

  • I started up again with my jar salads for lunch to take the guesswork out of my lunch hour.

    For Dinner:

    Mon: Veggie Noodles with peppers and steak

    Tue: Tilapia, mixed veggies and Rice Pockets (Steamed in foil)

    Wed: BBQ ribs, mash potatoes and veggies

    Thu: I work – DH has to fend for himself

    Fri: Mom’s house for dinner – Chicken Enchiladas


    I started a Pinterest board on freezer meals just last week to get ideas on what meals I can make ahead. I really wish I had larger freezer storage.

    We don't have a lot of freezer space either, so I'm trying to make meals that use freezer ingredients (fish, chicken, etc) that are more complex than we'll want to make sleep deprived! So I'm hoping to make enough freezer space for a few bags of crockpot meals. We went grocery shopping today for about 5 freezer meals, so I'm hoping to attack that later this week. And if I have to eat some extra ice cream to make room, I'm willing to do that too!  :D

    ETA: @LadyBugMe101  For the foil packets, does the rice get put in already cooked or does it steam? I assume veggies and fish are put in raw. If you have a recipe link, I'd definitely like to see it!  :)

  • Re: freezer meals, I tried to talk to my H about it and said we might want to consider making some so we have quick stuff on hand but he doesn't think it is necessary. I'll probably still plan some stuff anyway because I'm sure we will need them, just can't figure out what to make. He is allergic to poultry so it is all red meat or pork and all my go to stuff is usually chicken-based, especially freezer recipes besides making some pulled pork or chili.

    I have a Pinterest account but never actually use it. Google will work :) Now to make some room in the freezer before hand haha
  • @irshdancr5500 - I started with this recipe but over time I just used whatever fish and veggies I have on hand with the instant rice as noted. We usually grill this outside instead of the oven. Either way works and it comes out yummy.

  • Monday: we had steak and cheese subs with green beans Tuesday: I forgot to take something out of the freezer so we had French toast, bacon and homefries Tonight: pan fried breaded chicken, roasted potatoes and probably a salad Thursday: DH will probably grill up some chicken and we will have a veggie and either rice or biscuits Friday: DH and I are going on a date night to a local steak house. Very much looking forward to that Saturday: my mil bought us tickets to an Italian supper at a local farm Sunday: chicken noodle soup & crostinis

    @LadyBugMe101  Instant rice, what a good idea! That looks tasty, and we're definitely looking for recipies to use up fish from the freezer. We'll have to give it a try!
