We had one of our showers yesterday and were sent home with SO MANY LEFTOVERS! So I'm trying to utilize them this week to save some dough... why not!
We have basically a whole veggie platter left over, grilled onions, sauteed mushrooms, burger patties, mashed potatoes, pico de gallo... and so much fruit, which I can't really have a whole lot of because of GD. I'll probably freeze the fruit and make agua fresca or sorbets in a few months when I can actually eat it. Anyhow, here's my plan of attack!
In no particular order...
Pozole (with a few more veggies than the recipe calls for)
Bruschetta Chicken with salad (using tomatoes from veggie platter)
Creamy Herb Chicken with roasted carrots and snap peas
Salsburry Steak Meatballs with cauliflower and potato mash (using left over burger patties, potatoes, grilled onions and mushrooms) Trying to make this a little more GD friendly by using a little of the mashed potatoes mixed with mashed cauliflower.
Blackened salmon with pico de gallo and snap pea salad
