  • It's been so hot ladies, like so so hot.

I think this week we won't be doing much cooking.... just a lot of like salads.
  • OOoh and cold soba!
  • I've been trying to make things that leave enough leftovers for DH and balance that with things I know my toddler will eat.

Tonight I made one pan chicken fajita pasta

Tuesday- Tuna salad sandwiches, cauliflower tots, fruit salad

    Wednesday- Chicken, broccoli, rice casserole

Thursday- hot dogs, homemade potato salad, roasted carrots

    Friday- burgers, baked parmesan zucchini

    Saturday- beef stew

@CopperBoom86 I just had to Google "million dollar spaghetti." I never thought spaghetti could be improved upon. Now I know I was wrong.

  • This week we'll be having...

Leftovers from our Father's Day bbq - ribs, loaded baked potato salad, corn/avocado/tomato salad
    Fish tacos
Frittata with potatoes, bacon, red pepper, arugula and onion (I've never made this, but we had leftover potatoes to use...we'll see how it goes).
Frozen supreme pizza & Caesar salad
Spaghetti with marinara and turkey meatballs
Turkey burgers with a side salad

All but one of these meals is a super easy, go to meal.  We did enough cooking for the bbq!

Oh, it's delicious! I actually don't really love regular spaghetti, but DH does, so the "million dollar" version is our compromise. We do a lightened up version of it with 1/3 of the fat cream cheese, light sour cream, and a fraction of the butter (the recipe calls for an entire stick :o).
