BS in chemical engineering. I chose that because it seemed there were tons of options. Didn't do grad school in ChE because I was sick of school and deep in debt. Decided instead to get a Project Manager Professional cert and a Lean Six Sigma master black belt while working.
I've changed jobs/ industries every few years. Started in aerospace material science, then pharma R&D, then food science, then agriculture, pharma manufacture, and back to aerospace. Tried consulting for awhile too, but gave it up because I couldn't travel like that and schedule around IF appointments. I'm always at least loosely using one of the certs or engineering.

Such a smart board! Slightly intimidating, you guys...
I screwed around too much freshman year of college, so I majored in Social Sciences (emphasis in Psychology) with a minor in Business Law to boost my GPA with easy A classes. I started school intending to be a bio or neuroscience major, and after I got a C in chem, I realized college level physics and ochem were going to be disasters. So, I thought I would go to law school. After working for an attorney the first year after I graduated undergrad, I realized I did not want to be a lawyer enough to take on the debt created by law school.
Without that Business Law minor, I never would have met DH, so I wouldn't change my path at all.
I have a Bachelor's of Science in Psychology and a Masters of Arts in Clinical Mental Health Counselor. I am a Licensed Professional Counselor Intern and will be fully licensed in October of this year. I started my own company so I use me degrees everyday. I wish I would have took some classes in business.
I got my bachelor's in a general engineering program, and just finished my PhD in materials science and engineering.
I teach engineering in a 2 year program now which focuses on transferring students through a partnership to a top 10 university- the one where I got my PhD! So yep, I use a good bit of my education.
I studied Early Childhood Development... and work in Resident Care for the elderly and disabled. I ended up loving what I do, so my degree is probably going to go to waste.

It's so cool to see the huge range of ed backgrounds and careers! My degree is in print & digital journalism, and I'm a marketing manager at a creative agency. Picked up the strategic and tactical marketing stuff along the way—but the storytelling and writing are fully applicable

I got my BS in accounting. I do data analysis now, so I somewhat use my degree. A statistics degree would have been more useful though.
