I've been slacking in the meal planning department. I've got a few things on the menu for this week, but things could change, & my options are pretty un-inspired. I wish I had the creativity you ladies do...or a husband who would actually try new things, lol.
M: Spaghetti T: BBQ - H probably just burgers, I'll have cheddar sausage & veggies W: Fajitas Th: Homemade Pizza night Fri - Sun are up in the air. We'll figure those out as we go, & we are hoping to have dinner with friends one night.
M- Pork loin and roasted cauliflower T- Breakfast W- grilled chicken and leftover potato salad Th- Italian sausage and peppers with polenta F- Whatever is left I need to use.
We have spring break next week and we're having our disgusting floors re-done, so this weekend is going to be a bunch of hard work getting ready, next week my house will be a disaster and the weekend after, I have a baby shower. That means, I'm either using it this week or accepting that I'm going to throw stuff away because I don't see much really cooking happening next week. That also means, I have to keep my tired, unmotivated self, motivated to cook this week because we don't have enough money to be throwing away good food!
All of these meal plans are making me hungry! We were traveling this weekend, so I didn't do my usual Saturday grocery shopping. Planning to stop by the local natural foods store on the way home to pick up enough stuff to get us to the weekend, so my plans may change depending on what they have in stock.
M: Hopefully something pre-packaged, maybe mac and cheese or a frozen pizza with a salad T: Sausage and egg breakfast sandwiches; we've been eating these a lot lately, but they're so easy and it's a good, filling meal. W: Chicken enchiladas R: Stir fry, probably chicken and veggie F: Leftovers Sa-Su: TBD
