I confess I'm still mostly having dinner at my parents'.  Though, this week I made kaluha pork in my Instantpot (nomnompaleo.com) with roasted vegetables, and a salad.  DD is able to occupy herself for bits of time even if she doesn't nap, so I can get a bit of cooking done.

I'm so intrigued by the instantpot. How do you like it

I'm so intrigued by the instantpot. How do you like it

I love it!  I'd been too nervous to have a stovetop pressure cooker - I like the safety of this one.  And, it does so much!  I've used the sautee and slow cook functions too.  The timer is awesome, since I'll leave food to come on while I'm at work (well, when I was at work).  Amazon has sales on them about 4x a year - around Black Monday and after Xmas, and then recently as well, I think for Prime Day.

I have been making pasta salads, and potato salads to always have on hand as a quick meal starter. It's great because you can make them vegetarian, or with meat, and use fresh veggies from the garden. Our garden is teeny tiny this year, but The few zucchinis, tomatoes and green beans have made our meals special :-)
Another great quick meal idea I stole from a friend: mix leftover rice with spinach, grated zucchini, an egg and cheese- thrown in a hot pan with oil makes yummy fritters.
