Lol don't know why I posted this because we are having leftover baked ziti and the boys will have sausage with theirs. So no cooking for me. But tomorrow night will be marinated steak with grilled asparagus and corn. I will have a nice big salad.
This is the best steak marinade you will ever have ( says the vegetarian who has never had it)
Two stalks celery Medium onion 1 cup light soy sauce 1/4-1/2 cup gravy master 1/4t pepper ( I just use the whole peppercorns) Dash of ground ginger ( I always have fresh so I just add a few slices)
Put all this in your blender until liquified and frothy. Put marinade and steak in ziptop bad and refrigerate overnight. Cook on grill and enjoy!!!!
I'm planning to make oven-baked fajitas tonight. I've never made them before but they seem pretty easy and sound delicious. I'll let you guys know. I'm going to make a few changes to stick to my diet, but for the most part will follow this recipe.
3 boneless, skinless chicken breasts,
cut into thin strips
2 Tablespoons olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1 (15 ounce) can diced tomatoes
(drained)
1 large onion, sliced
1 red bell pepper, sliced (seeds
removed)
1 green bell pepper, sliced (seeds
removed)
INSTRUCTIONS
Preheat oven to 400 degrees F. Grease
a 9×13 baking dish with non-stick spray.
Place chicken strips into the baking
dish. In a small bowl mix together the olive oil, chili powder, cumin, oregano
and garlic powder. Pour the mixture evenly over the chicken and stir to coat.
Add the tomatoes, peppers and onions
to the dish and stir to combine.
Bake
uncovered for 30-35 minutes or until chicken is cooked through and vegetables
are fork tender. Serve with tortillas and you favorite topping!

My partner is out in the field overnight for work so i will just be heating up leftovers from last night. I will be having grilled tilapia with summer squash:
We put a rub on the tilapia (this one has an asian spice theme). Then grill and serve with Trader Joe's aoli garlic mustard sauce
Summer squash - simply sauteed with salt and pepper.
Yum! Think i am going to go eat right now!

They were pretty good. I didn't have cumin, I remembered using the last of mine AFTER I was home and making these. There was definitely something missing without it. But, they were SO easy and the chicken stayed pretty moist. I added a bit of red pepper flakes too.

Tonight is Tuna steaks on the grill, roasted broccoli and brown rice.
