The LO knows when they are hungry and when they are full. If your LO is on the upper end of the charts, like both of my children, then you can throw out the recommendations of the "experts". If your LO is on the lower end of the height/weight charts then you adjust accordingly.
My LO would/does drink more than the recommended amount. Usually it will last a few days then he goes back to drinking the recommended amount. I found right before he was about to make a breakthrough (smiling, laughing,cooing,rolling over,growth spurt) he would drink more. Also sleeping more usually would coincide with drinking more. For instance he has been drinking/sleeping a lot lately so I'm thinking sitting up or a tooth is next.
The first couple times he would drink more than recommended I got a little worried. Honestly I would listen to your baby about when he wants to eat and how much. If he's hungry, he's hungry. It's really hard to over feed a baby. I mean if he eats to much the overflow reaction is close to follow lol.
Now if he consistently eats more then recommended I would consult with your doc.
Have you tried keeping a log? I do this a lot. I start when he wakes up for the day and I write down everything. How much he eats and when, naps, soiled/pee diapers, anything else that you feel is important. After 24-48 hours I look back at my log and figure up how much he slept/ate/diapers. It really helped me put everything in perspective. Also it gives you something to show your doc should you become worried or concerned.
