Dinner help!

help!!! As the days go on I'm finding myself getting so tired and worn out! And when my husband gets home from work the last thing I want to do is be in the kitchen cooking and cleaning. So do yall have any short cuts when it comes to cooking dinner? I've looked into freezer meals but it's so hot here in Texas I don't want soups and casseroles.

  • Crock pot! Or mason jar salads! Food prep one day for all the meals for the weeks! I find lots of great things on pinterest

  • I did buy salad stuff and made personal salads in tuber ware containers. That way for dinner or lunch or just a snack I can grab one and put some dressing on it and eat. And that's been awesome!
  • I second the crock pot suggestion! You can make almost anything in a crockpot and everything is ready and there is a minor mess!

    So Last week I made crock pot chicken, I just simply slow cooked 4 large chicken breasts and added a package of taco seasoning. 
    Here is what I did with the chicken:

    Monday-chicken tacos 
    Wednesday- chicken caesar lettuce wraps
    Thursday- Chicken pesto pizza (basil pesto sauce, mozzarella, leftover chicken, cilantro on top of a whole wheat crust, put in the oven for 8 mins) made a side salad too. 

    *You can make a salad with the chicken also
    (*Skipped tuesday and made pasta so family wouldn't get sick of chicken) 

    I have also done bbq sauce pizza and alfredo chicken pizza. You can do whatever kind of topping you like. 

    I plan to do this when we get home from hospital too... so i don't have to do a whole lot of prep and cooking when baby comes home.

  • I like to buy the big packs of ground beef at Costco and cook it in a huge portion with onion and salt and pepper. I freeze them in 2/3 Cup increments. It's nice to have on hand for spaghetti and tacos.

    I also do this with chicken in the crockpot. Add lots of chicken breast, onion, chicken broth and cook. I then put it in my Kitchenaid and shred it.

  • Tacos are our go to and hubby never complains. I buy beef in bulk like @laurendutch said, but I freeze the raw meat in freezer bags by the 1/2 pound. Defrost in the microwave, throw in a pan and you have tacos in ten minutes. Also sometimes use it to make a meat sauce for pasta.

    Another thing I love is buying the precooked bratwurst or andouille sausage by hillshire farms or johnsonville. I slice them up and cook them in a pan with peppers and onions, or combine them with Zatarans jambalaya rice mix. Raw sausage is such a pain in the butt to cut and make sure it's cooked through, so I like to keep these around for when we get sick of chicken and beef. I cook them as if they aren't already cooked though to eliminate any listeria risk.

    I love my hubby but his cooking skills are limited. He's learning but it's a process. My dad was a food salesman and was always bringing new recipes home, so I have a lot more experience cooking. I'm teaching the hubs but it's taking time. I've been doing some of these prep ideas to make it easier on him and it's going great. I spent Sunday afternoon making pizza and stromboli dough while I had energy and haven't had to do much all week.

    He cant boil water and make pasta so at least you can have something??  If i had to come home and cook every night I would kill my self... We switch off every other night... I made sure of that the day we moved in together!!
