Meal Plan

I am trying to do better at menu planning and minimizing trips to the store. I also do better at eating healthy when I plan.

What's your menu look like this week?

  • Last night - Turkey Dinner (thanks to mom)

    Tonight - Left over enchiladas from Sunday. (I made creamy cilantro chicken enchiladas...recipe looked so simple and good; they were ehhhh OK)

    Wed - Crock pot beef stroganoff

    Thurs - Ranch chicken with veggies over rice

    Fri - Homemade Mac and Cheese (not sure what I'm going to put with it yet)

  • Monday- steak, veg, baked potatoes (also cooked grilled ck for later this week)
    Tuesday- porkloin with apples in the crockpot and sweet potatoes
    Wednesday - grilled ck, veg, sweet potatoes
    Thursday- salad with strawberries, apples, manderin oranges and grilled chicken
    Friday- Chili
    Saturday- turkey lasagna
    Sunday- fish, veg, potatoes

  • Sunday - Mexican breakfast for dinner
    Monday - fancy ramen
    Tuesday - roasted chicken
    Wednesday - take out
    Thursday - lasagna
    Friday - stir fry
    Saturday - spaghetti
  • Yesterday - Sweet & sour meatballs with rice and greens (chard)
    Today - Ginger lime salmon with quinoa salad
    Wednesday - Dijon walnut crusted chicken with potatoes an green salad
    Thursday - Asian citrus chicken stir fry with rice
    Friday - Taco night
    Saturday - Caesar burgers with crispy spiced potatoes

    I always start off well, but run into trouble at the end of the week. I am having trouble balancing working, commuting, DD, the dog, and preparing meals, AH!

  • Monday- Coconut chicken, roasted vegetables Tuesday- Veggie soup Wednesday- crockpot pulled pork with cauliflower tortillas and oven fries Thursday- Steak, baked potato, salad Friday- Crockpot whole chicken and gravy, mashed cauliflower Saturday- sautéed pork chops with mushrooms, peppers and onions. Roasted potatoes Sunday- Turkey tacos with cauliflower tortillas and homemade guacamole
    What are these cauliflower tortillas you speak of?  Sounds yummy...something you buy or make?

    I love this site called Skinny Taste...can I say that without getting in trouble? It just has a lot of recipes that are lower caolorie. I get lots of new ideas from it.
