NBR - Mason Jar salads

FOOD.

Anyone make mason jar salads?  If so, what do you put in them?  I like hardboiled eggs and pasta in my salads, will this keep in a mason jar?  What about avocado?  HALP.  I've read on the google that mason jar salads last for a long time, so I'm going to make some today for the week to see how it goes.

  • I sort of did this this last week! I didn't put them in mason jars, but I prepped and cut up a bunch of different veggies in containers in the fridge so I just had to throw it all together. It still took about 10 minutes, but that's not bad for a healthy lunch. Here's what I had ready
    - Lettuce, washed and stored in paper towels in a ziplock (don't shred it beforehand, it keeps better in leaves)
    - Bell peppers
    - Carrots
    - Radishes
    - Cucumber
    - Mushrooms
    - Grape tomatoes (no prep needed!)
    - Avacado (I didn't cut it up beforehand, they turn brown if you do)
    - Diced hard boiled eggs
    - Cubed chicken breast
    - Cubed cheese
    - Croutons

    I ate a large salad for lunch 6 days last week and could tell that it made a difference in how I felt. So much more nutrition than a handful of Christmas cookies like I was doing the week before that!
    Good stuff! 

    I've been looking on pinterest and stuff and "they" say that the salads stay fresh in mason jars so I'm giving it a whirl!  I like salads but haaaaaaaaaaaaaaaaate making them every night.  So if I can make them just once for the week, I'll be a happy camper!

  • Oatmeal yogurt breakfast in a mason jar was surprisingly good when I tried it last year. I will have to remember to make it when the weather warms up. Too chilly for cold breakfast these days.

  • Avocados won't brown as quickly if you squirt lemon juice on them. For a salad you might try adding those hundred calorie packs of guacamole for a similar effect since they are individually shrink wrapped

    I'll let you know how they are!  I made one for tomorrow and one for Thursday.  Interested to see how Thursday's turns out.

    When this idea caught my eye last summer, the trick was to put dressing in the bottom of the jat and the lettuce on top so it didn't get soggy.

    I'm marvelling at the amount of time I seemed to have last year. Lol.
