My friend sent me this one a while back...it is a favorite dinner in our house.
Chicken Pesto Flatbreads:
4 naan flatbreads or pitas
1/4 cup prepared basil pesto sauce
2 cups cooked shredded chicken
1 1/2 cups mixed cherry tomatoes, halved or quartered
1 shallot, halved and cut into thin strips
4 oz fresh mozzarella, diced
1/3 cup part-skim ricotta cheese
2 tbsp freshly grated Parmesan cheese
1 1/3 cups baby arugula
Directions:
Heat oven to 450 degrees F. Place flatbreads on a large baking sheet. Spread with pesto and top with chicken, tomatoes, shallots, and mozzarella. Spoon small dollops of ricotta over each and sprinkle with Parmesan.
Bake 8 to 10 minutes or until crusts are golden and crisp and cheese is melted. Top each with arugula leaves.
Does the one that shows up in a cardboard box on my doorstep count?
When I get ambitious to make pizza, I use a regular dough recipe, but I use olive oil on the pizza pan and sprinkle cornmeal in the oil. For some reason the crust seems to get crispier that way.
DH likes everything, C only likes pepperoni, and Amelia can't have dairy. Pizza in our house, right now at least, is interesting.
