Dinner ideas?

While all of you US ladies are thinking about your yummy Thanksgiving dinners, can anyone help me out with some dinner ideas? I have some extra lean ground beef that I want to use, but I'm not feeling inspired. 

And this could be our weekly recipe thread because I am terrible at remembering it, so if you have anything else to share, please do!

I'm planning to make stuffed bell peppers one day soon, @km_md. My other go-to ground beef recipe (before I had to go dairy-free) was a beef and spinach casserole with lots of mozzarella cheese. Let me know if you want the recipe.

Also, I need help! I made @tj1979's famous chicken and rice casserole yesterday, and it didn't turn out quite right. The first time I made it, it was delicious. Last night, I followed the same recipe and my rice didn't cook all the way in some spots. The only thing I can think that would have caused such a difference was that DH was watching the water for me while I changed a diaper, and I didn't leave him enough instruction, so it boiled for 30 seconds or so before I threw the rice in. Could enough water have steamed off that it made that much of a difference?

Jane is it possible the rice and liquid didn't get stirred well enough and you had dry clumps that couldn't absorb liquid?
I always like meatloaf. Or chili.

Tacos, that's what we had last night. Or hamburgers. I'm pretty boring when I don't have a plan.

It's quite possible! I was trying to get it thrown together in a hurry, so I may have not stirred it at all.
