We are going to DH's parent's for Thanksgiving. We offered to bring a side and dessert. I'm making some variation of a pumpkin cheesecake with salted caramel sauce (like this):
I'm probably going to be that ass who brings nothing. My sister I live with is hosting only we are going to DHs brothers. This means I can't cook and have no room in the fridge for anything to take with us because she has to make her stuff. I guess I can pick up snacks or dessert Wednesday at the store but that's about it.

DH is bringing rolls and pies home from the bakery. We're making Ina Garten's corn pudding, DH's family's cheesy broccoli, roasted carrots, a roasted acorn squash, mashed potatoes and stuffing. Most of it is really easy prep and DH will be playing sous chef so I don't kill myself.
I'm having all kinds of feels that this is the first Thanksgiving in NINE years that I haven't made the family recipe rolls, fudge, and caramel corn but I had to be realistic that I just got out of the hospital and the work-intensive stuff is going to have to wait.

OMG. Ready for this? It's truly the easiest thing ever. I just don't have the energy for more cooking.
A bag of chocolate chips (good ones - Scharffen-Berger are my fave), a can of sweetened condensed milk, and a teaspoon of vanilla. Heat up the sweetened condensed milk til it's just under boiling, then pour it over the chips and let it sit til everything's all melted and gooey. Add the vanilla, stir it all together, pour it in a wax paper lined 8x8 pan and chill. Slice it once it's chilled for a couple hours.
I also love the marshmallow cream fudge recipe that's on the side of the Fluff jar, if you have a candy thermometer and feel like babysitting the stove a bit more.

I am unsure on that myself but everyone raves about them so I figured they were worth a shot. Will let you know how they come out.
