High School Recommendation Letter

I had a student six years ago who is now in the 8th grade.  She showed up in my classroom today, an hour before the end of the school day, and asked me to write a recommendation letter for her.  I've only said hi the past six years when I've seen her.  Oh, and it's due Monday. And this weekend is my daughter's birthday.  Great! I felt bad saying no, so I asked her to tell me a little bit about what she's involved in.  It was like pulling teeth.  Any ideas for what I can write? Never done this before.
