Soup recipe!

I am looking for a fairly simple potato soup or chicken noodle soup. I have made chicken soup before but I can never get a good feel on when to put the veggies and noodles in. Any help would be great. Thanks l

  • I'm a big fan of potato leek soup; vichyssoise when served cold.

    2 tablespoons butter
    4 to 5 medium russet potatoes (1 pound), peeled and roughly chopped
    3 large leeks (1 pound), cleaned and thinly sliced
    6 cups vegetable stock (or light chicken stock)
    Kosher salt, to taste
    1 cup heavy cream or half & half
    1/3 cup minced parsley or chives (for garnish)

    Saute leeks and potatoes in butter until leeks are soft. Add stock, boil for 45 minutes. Puree (either immersion blender or regular blender in small batches) until smooth. Add cream. Season to taste. Garnish with parsley or chives (keep it vegetarian) or bacon (for DH).

  • This is my favorite soup, and it's kind of a cross between potato and broccoli cheddar (with a few extra veggies thrown in!). Sooooo yummy! I usually make it in the crockpot.

  • Chicken noodle soup is fairly simple. Boil your chicken broth, throw in veggies and chicken, then continue to cook until the veggies are tender. Add noodles, and cool until tender (not very long). Enjoy!

    I don't really time mine; I just test, and go from there.
  • The only tip I have (working in a restaurant and we make our own soups) is don't put the noodles in until you are ready to eat! Else they get mushy and gross. So cook some noodles and keep them in a ziplock bag or something and then heat up a serving(s) of soup at a time then throw the noodles in for a few until it's all hot. It makes all the difference!

  • I make a yummy, easy potato soup in the crock pot. I dice half an onion, some carrots, some celery and put it in the crock pot with salt and pepper. Then I add about 3/4 of a bag of frozen diced hash browns. I then cover that with stock (I use veggie because I am vegetarian) and turn it on high. I let it cook for a few hours then add the rest of the frozen potatoes. Near the end as it starts to get thick, I add a little milk or cream. You could eat it like that or add toppings. We do sour cream, cheese, sometimes green onion (bacon if you want). Really good and really easy.
  • This recipe is good, but I like to use a short pasta like penne or rotini.

    Also I agree with what PP said about just putting the noodles in long enough for them to cook and then not keeping them in the big pot of soup for a long time when the pot is hot because the noodles will keep cooking and absorb the water and get soggy and gross.
