Healthy/easy breakfast ideas

hi all! A friend of mine is a nutritionist, and she recently posted a recipe for banana pancakes (mash a banana, beat an egg, mix and cook like pancakes) to a blog post about toddler breakfast options.

Tried it this AM, and DD is happily chowing down.

But it got me thinking! What do you guys do for breakfast? Oatmeal is weekend only because it's so messy, so we do a lot of pancake/egg combos.

Our standbys are:
- keep a squeeze full of pancake mix in the fridge, use it for a few days, sometimes put peanut butter on/in the pancakes
- fruit, crackers, and cheese
- omelette with cheese and frozen peas
- pumpkin waffles (frozen) with cream cheese

  • He had breakfast at DC twice a week, the other days we have pancakes, oatmeal or cookies with milk... I'd like to be more creative and cook different things..

  • I give oatmeal a lot of mornings, but I make it thick, so it isn't as messy.

    Sometimes I'll make a batch of egg muffins on the weekend, and just give him an egg muffin in the morning. Apples and cheese is another morning favorite.

    He eats a second breakfast at daycare, so I don't make too much, but he eats the best in the morning, so I like to fill him up.

  • Yes. Here's a recipe, but I don't really follow it, except for cook times. I throw peppers, mushrooms, broccoli, etc in with a little cheese to get a lot of protein and veggies to start the day. And I don't have time to cook eggs or pancakes in the morning, so it works out well.

    We used to not have time, but then the time change happened...

  • He eats breakfast at DC during the week.  Anytime we feed him breakfast, he usually has eggs with either a waffle or peanut butter toast, and fruit.  I also made a batch of homemade blueberry muffins that are in the freezer that he will have sometimes, when I remember they are in there! 
  • We try to mix it up.  Some examples include cottage cheese with a fruit (mango, papaya, you name it!), avocado spread on bread (he LOVES avocado), grilled cheese, omlets with honey turkey and a veggie (tomato, asparagus, or broccoli), greek yogurt, or bread with jam.  We also add flaxseed and/or wheat germ to meals for some extra nutrition.

  • We normally go easy on breakfast sine she gets breakfast at DC or grandma's house. During the week it is dry cereal or an English muffin and a banana. Weekends consist of pancakes, eggs and the works. :-)

  • I make batches of breakfast foods on Sunday to last us the week. That way, the babysitter just heats it up during the week. I cook and freeze a variety of pancakes (banana, cottage cheese, and pumpkin, individual not combined), bake and freeze a batch or two of ham and cheese muffins, and a weekly batch of egg muffins. In the mornings, I pick one of these to pack for her, and she'll eat it with yogurt on the side.

    On weekends, we either go out for breakfast or I cook French toast, potato omelette, or corn beef hash with rice.
  • Our go to is scrambled eggs, plain toast, and fruit.
    He has recently started eating actual cereal, like in a bowl with milk and spoon, but its hit or miss wether he's going to make a huge mess so I don't like to offer too often.

  • B won't eat eggs. I'm lazy and he gets the same cold breakfast every day: cup of milk, a banana, and plain cheerios.

  • I'm not sure how healthy it is, but wrapping omelette type fixings up in crescent rolls and baking them is always a hit. Good way to sneak in veggies at least.
