I also made pumpkin muffins, roasted sweet potato and apple to top quinoa, veggie stirfry and garlic quinoa for DS for DC meals.
@jennameowion I hadn't had it before, and it turned out pretty good. I forgot to turn it on high in the morning so that DH could turn it off on his lunch break, so it ended up being on low for almost 11hrs on accident, which made it a little mushy.
I used one large can of enchilada sauce and made up for the missing ounces with chicken broth, which worked great. I also added some shredded chicken to the bowls at the end .

Fri-sat not sure. Gonna make beef vegetable soup at some point over the weekend. Maybe shrimp tacos. We shall see.
