DH and I got a new mattress in March. We are already planning on buying a Sleep Number as soon as this one is paid off. My biggest advice would be go to an actual mattress store where that's all they do. Let someone walk you through picking one out. Lay on them for longer than your comfortable doing, and in the position you usually sleep in. Don't rush it. We spent $1200 on our set, and we've hated it for a few months already.
We are in the market for a new mattress, too. Regarding the memory foam....is it hard to, um..... do adult things?? That's one of the negatives we have been reading about, and it seems to come up a lot in people's 'cons' lists..

We had one for one month before we got our current one. (We had LOTS of problems with our order, and with Rooms To Go, so don't think I'm a horrible mattress snob). Anyways, yes. For us it required a bit more effort Not horrible, but not quite as fun as our spring mattress was.
We have what is called a soft top. It is essentially a pillow top mattress that is sewn down so it is a bit less fluffy. I have always had back problems and like a stiff mattress, but DH likes a really fluffy mattress, this was a decent compromise.
I also recommend going to a mattress store. That is what they do. Talk to them about what you both need in a bed and lay on all of them.
Unfortunately, you can't really price shop because every store name has their own mattress name (Store 1 = Seally Posturpedic Awesome, Store 2 - Seally Posturpedic Sweet) so you won't usually find the exact same mattress to compare.

According to this chart, it is better for faster climax though
We bought ours in January and LOVE it. It is a BeautyRest. We did pay about 3000 and we are still paying for it. Our old mattress was a hand me down when we got it and was absolutely worn out. We also went to a mattress store and laid on them for a while.
Awesome, thanks for all the advice! My biggest concern with the memory foam ones is the heat issues I;ve read about...I do not like being hot when I'm trying to sleep. LOL @hmp1, I've been reading the Sleep Like the Dead website since we started looking for mattresses and read that section aloud to my husband!
We haven't had any issues doing adult things on our mattress. Ours is really firm (that's what she said) so we don't really sunk into it to far or anything.
We thought maybe we wanted memory foam, but I have always LOVED Simmons BeautyRest mattresses in hotels, so when we found a Simmons hybrid spring/foam mattress we were sold. $4k later, it fucking sucks. I can't even tell you what I hate about it most, but we both sleep like shit on it and we both agree we should have gone with a regular Simmons BeautyRest pillow top spring mattress.
We have an 11 inch firm bob-o-pedic memory foam. We've had it almost 4 years. No complaints - just that it takes a few days for it to air out. It has a strong plastic-y smell at first.
Re: mattress recommendations?
Not what you were looking for, I know

If you're not in a hurry to buy, wait for Black Friday. Lots of good deals.
