Be careful soaking in salt. Some types of beans do better having the salt added to the water just before they're done cooking. It can actually cause them to stay hard while they're cooking rather than getting tender.
Actually, that's not true. I thought that that was the case and was always confused at the ATK recommendation to brine your beans. But after MK's hard bean issue I researched and found that it's minerals in your water or recipe (or old beans) that cause that to happen.
Does this mean I should be adding Calgon to my beans?!!
