So we've talked about what our kids are taking for lunch but what are the adults taking? We're trying to save money by taking our own lunches but we're getting tired of sandwiches and soups.
I've made a big batch of chili a couple times in the last month. We will have it for 2 dinners (usually a day or 2 apart) and then a couple lunches during that week.
Eta: even if I don't make @subliminalrabbit's slow cooker recipe, adding a diced sweet potato to my regular, non-vegetarian chili has been a new yummy twist.
I end up eating out lunches pretty often for work related stuff, but the days I take lunch, it's usually leftovers from the night before. I also make salads. I have this set, so it's easy to make a big salad with the 2nd largest bowl size. I throw in tons of lettuce and veggies and greens, sometimes beans (like garbanzo), sometimes cheese, once in a while a protein like chicken, and then I toss it with some dressing once it's time to eat, so it doesn't get soggy.
I have a really yummy broccoli pasta salad recipe (I'll add it to the recipe thread!). I made it a few times this summer to go with burgers, but Madeline and I would eat the leftovers for lunch for the next few days after. It keeps really well. I also love a salad with spinach, quinoa, fruit (I use whatever is on hand, berries, citrus, grapes) and a balsamic dressing. Sometimes I add shredded chicken. Quinoa, chicken and dressing easy to make ahead and keep for a few days in the fridge. Then you'd just need to prep your fruit and load up some spinach the night before.
ETA- I also add feta to almost all of my salads.
you can mix up sandwiches if you are just doing standard ones like doing chicken salad. I've cooked some mashed potatoes before and made a bowl with the chicken that is already cooked, cheese, onions etc like a KFC bowl. And I buy some of the healthy choice or Lean Cuisine meals and keep a few at work and eat those for lunch every other day. Still cheaper than going out to lunch/fast food.
Speaking of chicken salad, I've been making a yummy one lately. Leftover diced or shredded chicken, fine diced red onion, fine diced green apple, quartered red grapes, plain Greek yogurt, bit of Dijon mustard, generous amount of curry powder. So delicious!
I almost always eat Greek yogurt at work, I like Chobani or Fage. The higher protein in it fills me up. I also like hummus, baby carrots and pita chips. I add a granola bar, snack pack, fruit and/or cheese stick.
