Coffee, please!

Happy Monday, friends. It's 8:15 here in the mid-Atlantic and I've had three sips of my Nantucket Blend k-cup coffee. How's everyone else's morning going? Any new brews you're trying out?

I switched it up today with the mug. Got this as going away gift from my last company. I hate powder pink, but it keeps my joe hot. Priorities, yo.

Ugh.  Not to coffee quite yet today.  But I made a maple latte over the weekend and it rocked my world.  Today will just be my usual though.

These are amazing!  I made a few subs to make them gluten, dairy, soy, and nut free.  But they were really good.  E loved them too.  They don't even need syrup.  Although syrup is amazing on them.  I was going to make them this weekend with pumpkin instead of banana, then use the rest of the pumpkin for the pumpkin syrup.  But D went out and bought barbacoa tacos instead.  So who am I to say no to that?

Generally, 1 cup mashed banana = 3 bananas.  So if it calls for 2 bananas, that would be 2/3 cup.  I might add 1/2 cup pumpkin and mix the batter up.  If it isn't pourable, add more.

Same, but I'm not complaining, because with the schools out driving to work was awesome and relaxing.

This is why I like working between Christmas and New Years.  No one is in the office, no one is driving around at 7:30 in the morning, and I can peacefully work and drink my coffee.

Schools are out for Columbus day?  O went to school today. I didn't even know it was Columbus day. Quite frankly, Columbus day is a ridiculous holiday anyway.

D has school today too.  But G's daycare is closed.  Go figure.  

We even have a parent teacher conference this afternoon.  And I'm at work.

Not only does my employer hate America, so does my kid's school. LOL.

Oh and I'm drinking Seattle's Best Cinnamon flavored coffee with half and half and raw sugar.  I won't post the boring paper cup pic.

I noticed last night we only had one K Cup left, and MH always makes it to the coffee before me in the morning (because I always end up on baby duty). So I hid it \:D/ Guess who got a nice hot cup of coffee this morning? I need it more anyway...hehe

Vanilla coconut doesn't sound terrible if you're in to those flavors.

I'd just make peppermint syrup and add a spoonful of cocoa powder directly to the coffee of you want mocha-y flavors. I've done it before and it's tasty :-)

SAK - cocoa has some weird hydrophobic properties, it doesn't like to dissolve in water.  I would make sure you put the cocoa in when you do the heating process, and make sure you whisk it really well.  And always wait to add the extracts until you take the syrup off the heat (or out of the microwave.)  Don't cook it with the extract in there already.

yeah, i was thinking this about the cocoa.  i know when we make hot cocoa in the winter we have to be particular about getting it all to mix.

and i always wait until everything is completely cool before adding the flavorings.  do i not need to waste the time letting it cool all the way as long as it's not on the heat source anymore?

The whole "cool something then add extracts" thing never made sense to me. You do lose aromatics to heat, but all the extracts you buy in the supermarket are heated in the making, sooo... Also if you add the flavoring earlier you might even cook off the alcohol, or at least take off its edge.

EXACTLY why I wait to add extracts.

Don't you love/hate when that happens maple?  We can never go out to steak restaurants anymore because D makes them better.  It's a real money saver, but also kind of a bummer.
