Neither Wesley nor Gray grabs me as a MN. I actually hate Gray (why don't you name him Blue or Green? They are much nicer colors and just as valid as names. I guess they are not trending?) so, I voted Wesley. I kind of like it bc of princess bride but in the mn spot I like to see something with meaning/tradition/excitement in it. Do Gray and Wesley have meaning for you? If you think they just sound good with Sabastien please give it another go. They both sound okay but I think you can do better.

Well, if you're not into trending then go with Wesley (I've met 2 baby Grays this year and heard about more from the Internet). If the popularity means less than the meaning to you Gray sounds fine.
Love Sebastian. It's a top contender if we have another boy. I do see it as moderately popular, but not so popular that I wouldn't use it (and I have a popularity phobia).

I love the name Sebastian! Great choice. I really think you could pick either mn- they both sound good.
I will say, Sebastian Grey did make me think of Christian Grey and I haven't even read those books. That is my only caveat, and otherwise I thi you shuld decide what meaning you are more pulled towards.
I dislike the name Gray. I like Sebastian much better than Dax. Not that you asked. Would you use a nick name with it though? Does it have a nick name?
ETA- looked it up and Seb, Bas, and Bastian are nick names. Seb and Bas have the same feel as Dax, but he also has a longer name to fall back on. Maybe that's why you are having second thoughts on Dax, that is was too short or seemed incomplete or something. So I think Sebastian would really fit your style.
I didn't ask, but I planned on it lol. If we decide Sebastian would be the name we change to that would be my next post. Nickname would probably be Bastian or Bash. I don't hate Dax, it just doesn't seem right. I like it went I see it or when my daughter says it but it just doesn't feel right to say or hear other than that. I don't think it fits him.
