I SAH and I do both. Keep in mind when I give this list that I'm also feeding a toddler! If I make lunch, it's generally one of the following: canned soup, hotdogs, sandwiches, chicken nuggets, pasta, cold cuts, grilled cheese, quessadillas. Leftovers tend to be better because I put more effort into dinner. There are also days that I eat leftovers and she has a hotdog.
I go to work and I always pack my lunch, which can be difficult because I don't like sandwiches. Things I've taken include: salad, fruit, a smoothie, muffins (banana or zucchini), leftovers, or soup (homemade tomato or broccoli cheddar). Sometimes I make a collage of things and take a bunch of small snacks, like cheese and crackers, fruit and carrot sticks. I've also made chicken or pasta salad and taken that which works really well.
I eat a spinach salad with tomatoes, mushrooms and cucumber at least 3 times a week but in other days it's soup and crackers or a lean cuisine. You really can't beat a $2.00 lunch. Though I always add a fruit on the side bc those fill no one up.
Right now, I'm home with DH during the day - he goes to work at 4. So we end up eating a big lunch around 3 and I skip dinner or eat light. So it could be anything from a sandwich, soup,salad, or protein/veggie/grain combo (like dinner).
When I'm in the office, lunch is usually a salad or something light, like yogurt and fruit or a power bar or something. Not particularly exciting but I try to just eat small snacks throughout the day when I'm sitting behind a desk and not moving much.
I feel like I'm not helpful at all.
I SAH and like others usually have leftovers or sandwiches. I found some yummy wheat tortillas and I'll make a turkey and cheese wrap with lettuce and tomato most days. Sometimes I make nachos- spread refried black beans on tortilla chips and top with shredded cheese, bake at 350 for ~6 mins.
I do a lot of leftovers. I also keep a few "healthier" frozen lunches around for the days that I don't have anything and don't have the time to put something together. I've been trying (and failing) at having salad and fruit for lunch.
I usually eat a turkey sandwich for lunch. Only occasionally do I have left overs. Tomorrow I will have a steak and blue cheese salad because we have left over steak
My new favorite lunch: pre-cooked brown rice (I will make it with dinner early in the week and then make enough leftover for me), cooked grilled chicken (if they are on sale, I get them pre-made at the store. If not, cook it myself early in the week), on romaine lettuce with shredded mozzarella, cucumbers, and italian dressing or balsamic vinegar. So so good!
Before I went back to work, I tried to keep my lunch simple like dumpling (ling ling from costco), can soup, quasadilla and noodles. Every once and awhile I will make a couole days worth of pasta and eat that. Now that I am back to work, I sometimes eat a big breakfast and just eat a fruit or yogart at my desk for lunch so I can leave earlier to pick up LO.
I try to do leftovers as much as possible since it is just less work for me. I pack breakfast and lunch for both DH and myself every day, so any less cooking I have to do, the better. DH refuses to eat sandwiches which makes it tricky to pack for him.
If we don't have leftovers, I will usually cook up some chicken tenderloins and put them on top of a big romaine lettuce salad with tomatoes and croutons and cheese and pack him some dressing in a small side container for it. Or I just give him two servings of breakfast and he just has to deal with it (breakfast is eggs and fruit).
