We are having a roast in the crock pot with potatoes and carrots. I wish I could use the crock pot every night. We should have a crock pot recipe thread
My favorite thing to do with pork chops is put them in a skillet with a can of cream of golden mushroom soup (a little milk to thin it out, garlic, pepper, salt), red bell peppers, onions and let it cook. Then I make mashed potatoes to go with the pork chops and the gravy. It's really good.
I'm with you on the big chore part. I love to cook/bake and used to put a lot of thought into meals. Now I plan whatever I can make while entertaining LO in the high chair.
We just went to Olive Garden for lunch, and I brought home a meal. I work tonight, so I'm having a Tim hortons crispy chicken sandwich (because omg delicious) and h is having hot dogs.
I'd just grill those pork chops, add a salad or whatever veg you have on hand, and baked potatoes if you must have potatoes. (I put baked potatoes in the microwave and then grill with the meat. Ain't nobody got time to bake a potato for an hour.)

We are having... hamburger helper. No joke, it was actually planned that way. I'm working a long day (for me--8 hours at 1st job, maybe an hour at the 2nd), and DH worked 12 hours last night, plus he is keeping DD today (so he hasn't slept but maybe an hour).

Having friends over for dinner we are having a chicken broccoli rice & cheese casserole and chocolate chip cookie cheesecake for dessert. Made the cheesecake and prepped casserole during LOs nap so all I have to do is put it in the oven!
lucky for me tonight the ILs are taking us out for mexican food--im so excited!
but tomorrow, I'm making buffalo chicken wings in the slow cooker and were having sweet potato fries with them.
and were having pork chops on friday!! i make them in a super unhealthy way... season them with italian herb mrs dash, dredge in flower, then egg whites, then in breadcrumbs (breadcrumbs with grated parmesan cheese mixed in -- the parmesan cheese is the best part!)
then pan fry them for a few mins each side. throw them in the oven at 350 for another 10-15mins until they're cooked through.
i serve them with stuffing and a veggie. its soooo good lol. but yeah very not good for you
Couldn't help myself. Rushing the season. And I had fresh tomatoes, mmm.
* Stuck in box! I am so jealous. I loooove chili and we actually have cornbread mix because my friend was getting rid of all her gluten products and gave it to me. But it is 90 degrees outside right now and only supposed to get hotter for the weekend. I don't even want to turn on my oven to make the pizza tonight. In fact, I may just grill the pizza.
