What's for lunch?

The school I teach in is located in a very rural area, and since I only get 40 minutes for lunch, going out to get something isn't an option. In the past I've relied on sandwiches and salads, but I'm not sure a salad will be substantial enough and I'm going to try to stay away from cold cuts if I can. What do you ladies bring to work for lunch? I have access to a fridge, a microwave, and an ancient toaster over that smells funny! Any suggestions? Thanks in advance!

  • I usually bring a big salad, or a frozen meal, or a sandwich, fruit, yogurt, etc.  Sometimes I do a giant salad with cottage cheese, cucumber, tomato, and avocado, with lots of salt and pepper. So good!

    But! I wanted to throw in a plug for these things called GoPicnics - I keep a stash of them in my drawer at work for the days when I'm too lazy to pack in the mornings but don't feel like going out.  The nutrition on them is pretty decent, depending on what kind you get (I usually get the hummus + crackers variety).  Also, once you're on their email list it seems like pretty much every day they have some kind of special going on.  They are definitely a good thing to have around!

  • I will also avoid lunch meat.  I didn't really want meals last time.

    I found that I tend to be a nosher, especially when pregnant.  I pack a combination of: almonds, an apple, cereal bars, cheese slices or string cheese, pretzels with no salt, hummus and carrots and/or peppers, dry cereal (and I keep a carton of milk in the faculty room), peanut butter sandwich, and crackers. 

    If I did want more of a meal, I brought soup or dinner leftovers.

  • I was gonna suggest microwaving the deli meat first so you can eat it. Or you could make sandwiches from a turkey/chicken breast you cook on your own.
    I am lucky that I work from home some days but the other days I'm on the road a lot. So whatever I take has to be kept in an ice chest and can't be reheated. That leaves me stumped. So far I've just boiled some eggs and packed those,veggies,fruit and maybe a yogurt and nuts.
  • I like making a big batch of something on Sunday (soup, burritos, quinoa, etc.) and eat it for lunch all week at work. I do that a lot with chili in the fall :) I'm a teacher too, so I'm lucky to have 20 minutes to scarf down a meal. I'm going to try to do smaller meals throughout the day though.
  • I'm making a big pot of potato soup tomorrow to eat all week (with fruits, veggies and yogurt on the side). I'm also gonna try and make a batch of something on the weekend to use for lunches all week (chili, shredded chicken, pot roast, etc).

  • Great advice ladies! With my first, I was able to do the yucky morning sickness phase over the summer, but not this time.  Cheerios were my go-to last time around. I love the idea of cooking on Sunday and portioning off for the week.  I have a daily prep, and I do a snack time with my kids, in addition to lunch, so hopefully I can eat small meals throughout the day.  Thanks for the help!

    These look great! I like that they aren't just straight carbs, which I tend to crave, but I need the protein and fiber to get me through the day.
