Okay I have wrangled the fridge of unruly vegetables into something that look decently promising in terms of taste and nutrition. Dinner tonight is summer vegetable stew and brown rice.
We have a TON of zucchini from our garden, so I made a zucchini lasagna with zucchini bread for dessert. Seriously, we have been eating SO MUCH zucchini lately. At least it's healthy, right?
Tomorrow I'm going to make something with quinoa and cheese and (surprise!) zucchini.
That's awesome @evakatharina ! How long have you and YH been vegetarians? I grew up vegetarian, but DH switched over after marrying me because of all the health benefits. Plus, I'm the one who cooks.
@sarahchrismck We've both been vegetarian for 6 or 7 years now I think! We made the switch together during college. That's cool that you grew up vegetarian. H and I have wondered here and there what we will do about our little-one-to-be's diet and what to do about it. We haven't come to a firm decision yet. Do you know yet if you're planning to feed your little-one-to-be a vegetarian diet?
@evakatharina We've talked about this for a while now, and DH and I decided to raise our child as vegetarian. Since I grew up that way (and turned out fine!), I know how to make sure he/she gets everything he/she needs. We figure if we don't eat meat ourselves, why would we feed that to our child? It'll be easy at first because I plan on breastfeeding for as long as I can. I'm sure I'm going to get lots of judgement and comments from strangers and coworkers, but whatever. I know I'll get support from my family and DH's family. I'll also clear it with my doctor, although she is very supportive of the vegetarian diet.
So, yes, we will most likely raise our child(ren) as vegetarian(s), but if they choose to eat meat when they are older, that's fine by us.
