These amazing looking grilled chicken and pineapple quesadillas. It's my first time making them, but they're cooking right now and my mouth is watering by the cup full. With a side of rice and beans of course.

Haha I had 2 bowls of cereal for dinner and an apple. DH is working and that's what I needed at the time. No regrets!

I made veggie fried rice and a Thai peanut stir fry.. I really didn't enjoy any of it, wish I would have went with pancakes!

Hubby worked late so I just had an Amy's frozen (the black bean enchilada meal). Chased it down with the better half of a pint of ben and jerry's. i regret nothing.

Homemade chili! While bringing both mine and DH's bowls to the table, I dumped mine all over just before setting it down. I wanted to cry. Good thing I made a huge pot of it. Ha

London broil with mashed potatoes and green beans. I would make some crack about it being a total 1950s dinner except that DH cooked it. Alas, he did not wear pearls.

Pineapple Ham: Ham sliced, 1/3 cup brown sugar, 2 tablespoons of dijon mustard, one can of crushed pineapple. Mix all ingredients and pour over ham. Put in crockpot on low for 4 hours. It's easy and tasty.

I totally suck and am just now seeing this -- so sorry for bringing this thread back up.

But, @kdm06c, they WERE amazing! So amazing that we ate them for leftovers again tonight. I'm normally not a leftover person, like literally, I refuse to eat them and require my husband to eat them all. Not these bad boys. They'll definitely be making their way into my rotation!
