I make an amazing feta, spinach and carmeliZed onion quiche...semi healthy. Especially if you leave off the crust and call it a frittata! I can post the recipe if you want.
Not healthy but there is a recipe out there for creme brûlée French toast casserole that is so good I would almost give up my firstborn child for a piece. Paired with some fresh fruit and scrambled eggs it wouldn't be tooooo bad.
Bagels, lox and cream cheese and yogurt and granola (Alton browns recipe is delicious and very easy) to go with their fruit is always good.

We pretty much always do bagels, lox, assorted veggies, and scrambled eggs for brunch. I love quiches though. I bet you could do some salmon on bagels and some salmon in a quiche.
That's the recipe I used. I switch the half and half to whole milk because I have it on hand and leave out the grand mariner because I can't ever find a tiny bottle and it'll just go to waste. I also use about half a loaf of French bread, the kind from the bakery in the grocery store. Turns out amazing and so easy!

Salmon patties of some sort.... I make an asian style one. and Mimosas.... Duh!
I was thinking something like this, or like a salmon cream cheese ball and crackers or pitas to dip into it. Usually when I Do brunch I stick to an egg casserole and French toast, because that's what I am good at.
Kinda late but I was also going to suggest doing a salmon eggs benny. Just make the salmon into like a crab cake. There used to be a restaurant near me that actually had this on their menu. Sooo good.
Also. If you're going to do waffles, I have to suggest doing a maple syrup/cream cheese sauce. Its not very healthy (obviously) but ohmygod is it good. You just soften the cream cheese a bit and mix them together until its smooth and pour it on. Its best if its still a little warm when you serve it.
Just got a text from the guy of our brunch guests, apparently the girl is really picky (no eggs, no onions, no fish...) so I'm just going to do mini pancake muffins plain, with chocolate chips, and with banana and maybe some bacon and sausage...highly disappointed, but I will have 3 choices of champagne drink
