Does anyone have any healthy dinner recipes that have turned out good? I've consulted Pinterest, but I'd rather get some that are "tried and true" from my fellow bumpies. My husband and I have eaten like total crap for the majority of this pregnancy and I'd like to try to get things back on track.

I also really like a lot of the Cooking Light recipes (https://www.cookinglight.com/)- anything I've made from there had been delicious.
Emily Bites (https://www.emilybites.com/) is another one that has some good stuff.
I can go through my Pinterest and link some of the really good ones that I've made as well, but it might have to be tomorrow as I'm busy at work (imagine that!?).
I LOVE cooking and eating and I like to eat healthfully, so I understand the struggle. I should be able to wrangle up a few.

I went through my Pinterest but the only recipes I've tried that I saved in the "turned out awesome" file are particularly unhealthy haha - I guess that's why they were so good!

(The only things that might give someone pause about this recipe are the maple syrup and corn starch... I will probably use ground chia seeds to thicken rather than the corn starch. I am ok with a quarter cup of real maple syrup between 3 people tonight. I am not changing that...)
We will also have rice and brussels sprouts on the side.
And my daughter was moaning for a cherry tomato salad of some kind, so I will probably make one of those, too (Spanish onion, halved tomatoes, Japanese cucumber, EVOO, fresh lemon juice, dash of salt dash of good Italian spice).
I hope it all works together!

I rarely use recipes, TBH. I just sort of do whatever sounds like it might be good. Sometimes I win, sometimes it's just ok.

Hopefully some of those look yummy to you. As I said I've made each of them and liked them and I can be pretty picky about my food choices. One thing I often do (don't tell DH) is increase the amount of veggies in a meal/dish and decrease the amount of meat that is called for. This is an easy swap that doesn't really change the integrity of the dish, but it makes a big difference health wise. We do a lot of stir fries and one pot type meals and it's easy to add more veggies to those.
Another tip- if you don't already, MEAL PLAN! It's huge for us. I grocery shop every Sunday and have a full meal plan for the week. This ensures we don't grab something quick and unhealthy or go out too much. Even if we just plan to have something easy like omlettes for dinner from whatever is in the fridge it can still be made healthy. I also make sure there's some easy things in the house like tuna, wraps etc. and lots of healthy snacks- bananas, peppers and tzatiki, smoothie ingredients.

Roasted chicken is also very easy. I make one with some dijon mustard and other herbs and it's yummy. I'll usually roast some red peppers and red onions and whole garlic cloves (unpeeled) with it and sprinkle some rosemary on the veggies.
Another easy dish is chopped up raw veggies (no lettuce) just mini cucumbers, tomatoes, red onion and different peppers and cut small and serve with feta and dressing or with hummus.

I found a few of my own that are semi-healthy and figured I'd share as well.
Black Bean & Corn Salad - (one can sweet kernel corn, one can black beans, 1/4 red onion diced, lots of fresh cilantro, 3 cloves or garlic chopped, 3 tomatoes, 1 de-seeded jalapeno chopped, salt & pepper to taste) I originally made this as a topping for fish tacos, but it is really good alone or with chips. I add avocado sometimes as well.
Lasagna - this recipe is pretty intensive, but it is worth it. I use lean ground turkey and turkey sausage to make it a little healthier. https://allrecipes.com/recipe/worlds-best-lasagna/ I usually make two pans and freeze one.

The chicken was good! My daughter LOVED it. I liked it a lot. We used bone-in, skin-on chicken thighs. I would do the same again.... but we did end up peeling the skin off when we ate it. We like crispy chicken skin and this wasn't... but the meat underneath was really juicy, and I think having the skin and bones helped.
