Stroller, small pool, a few beach toys, umbrella to put over the pool, sun screen, extra sun hat, extra dry clothes, extra diapers swim and regular, baby powder- it's easier to get the sand off LO using it, a heavier shirt in case you stay later or baby naps and the wind is cool, a light weight blanket for napping in case it's cool and I would bring an extra towel.
Sounds like a lot. We live down the street from the beach so these are my usual packings.
The list above looks great, I would add sippy cup with water and some snacks. We also got some "sand socks" that help protect his feet from the hot sand so if you think those are worth it they were easy to find at BRU.
Baby Powder - it gets the sand off SO much easier than using water. Sprinkle the baby powder on the LO and it wipes away the sand. We always had LO in a swim shirt / skins and a hat. Lots of zip lock bags to keep the sand out of bottles, etc.

Umbrella , kiddie pool to fill with ocean water, sunblock, a jogging stroller with large tires for the sand
