DH and I love this Eggplant recipe. I promise it tastes better than it looks! Vegweb has been a really great resource for us. We decided to start doing vegetarian at home, it's healthier and cheaper for us. But if/when we go out or go to friends houses we'll still happily eat meat and we keep some pepperoni in the house for homemade pizza.
Not any more, but I was for seven years. One of my faves:
Use a mandolin or veg peeler to ribbon cut 4 large zucchini lengthwise, set aside.
Food process one bag of spinach and one cup of carrots until very finely minced. Put in a bowel, combine with one cup of ricotta, one cup shredded mozz and half a cup of parmesan cheese. Add in ground pepper to taste. Add in one beaten egg and incorporate well.
Put some tomato sauce in bottom of baking dish. Layer the zucchini like you would lasagna noodles. Top with the cheese and veg mixture. Add more sauce. Repeat until all ingredients are used. Top with more shredded cheese if desired.
Cook at 325 for 25 minutes or until the sides are bubbling over and the top cheese is completely melted.
Enjoy! It is just as delish as regular lasagna and is all veg and cheese. Yum.
You can make a lot of meat recipes vegetarian. Bean and rice enchiladas/burritos (switch it up using refried beans sometimes and black beans other times), spaghetti, Alfredo, veggie pizzas, spinach salad w a baked sweet potato, and veggie pot pies were my easy go-to'
I also wanted to add soups, veggie, potato (with broccoli is awesome), tomato, and chili are all great options with grilled cheese. And you can make plain grilled cheese or make it fancy with different kinds of cheese, add tomatoes and spinach, etc.
We get veggie crumbles and make recipes such as tacos (soooo yum) and "meat sauce". Also, baked ziti, eggplant parm (I have a no fry quick recipe), roasted veggie fajitas, cauliflower buffalo "wings", stuffed shells, Mac and cheese, vegetarian sweet potato chili, sausage and peppers (with veggie sausage).....

Well. Try GETTING a cookbook! ;-) For easy vegetarian, I like The student's Vegetarian Cookbook. Soooooo easy. I like the Clean Food books too, and Moosewood of course!

I also roast veggies in olive oil and whatever spices I'm feeling at the moment. I love root veggies and do random mixtures all the time.
