These particular ones I filled with scrambled eggs, roasted red and green peppers, ham, cheese and refried beans. I defrost them first in the microwave and then cook them till they're hot. So it takes like 10 minutes, total, I think.
Do you wrap. Them insaran wrap? Or how do you freeze them?

@stoneycakes - Okay, DH went to a local burrito place yesterday and spent nearly $8 on one breakfast burrito (didn't even get a drink!). I need to learn to make these things! Do you start with homemade or store-bought tortillas? Then do you do anything to them (add butter?) or just fill them with the good stuff. I can scramble eggs and saute the veggies, so that part isn't as intimidating.

I've made them with both store bought tortillas and homemade ones. Either way works great. And I don't do anything special to them except fill them up with yummy stuff. You can briefly steam the tortillas if you have any trouble rolling them up. Obviously let them cool a bit before you handle them, though. Hot!
@stoneycakes - So they're really that easy?? And also, like ITK asked, do wrap them in plastic wrap or what when you freeze them? Would freezer paper work?
Is the freezer paper good at keeping things moist? I've never used it. You just want to make sure they don't dry out. You could probably wrap them in freezer paper and then store a bunch in a freezer bag or anything air tight.

Oh that's a good idea. I do feel guilty about using the plastic wrap on them. I try not to use disposable kitchen stuff like that very much.
