Toddlers: 24 Months+

Favorite Vegetables

My ds 1 is a good vegetable eater and ds 2 is an ok one.  I just feel like I'm a boring cook and looking to see what your toddlers like. 

Plain and steamed we do

broccoli

cauliflower

carrots

We sautee green beans in olive oil, pepper and parmesan cheese

We boil peas and corn and eat frozen ones raw

We do raw carrots, tomatoes, cucumbers, green pepper

We roast brussels sprouts and sweet potatoes

Anything else?  I'm drawing a blank and I don't have any new ideas.  Thanks.

  • Yes, peppers, mushrooms and onions and olives here too, forgot about those.  Now from your list the one thing I see we don't do is squash much.  How do you fix yours?

  • My kid has a thing for frozen peas and corn too!  

    We do the same with the steamed, although not as much cauliflower since I don't like it.  And I'll also steam green beans and artichoke.

    For the saute - try adding some basil and garlic with the parmesan and olive oil.  (I'll also add red pepper flakes for DH and I, but my kid doesn't like spicy. 

    I saute spinach (or kale or chard), snowpeas, zucchinis/summer squash, artichoke hearts, and you can also saute the brussels sprouts (I like to do this in bacon fat and toss the cooked sprouts with bacon).

    Raw is usually carrots, tomatoes, cucumbers, celery, bell pepper, jicima.

    Roasted veggies - sweet potatoes, turnips, squash, carrots, broccoli, zucchini (which I guess is technically a squash), eggplant, brussels sprouts.

    Some of my favorites growing up were steamed green beans tossed with slivered almonds, sauteed carrots with maple syrup, and spaghetti squash with tomato sauce.

    He loves frozen peas and raw sugar snap peas, green beans roasted in olive oil with minced garlic and fresh grated parm, raw green beans, salad, carrots in any form, stir fry veggies, corn in any form, steamed broccoli with a little butter, raw tomatoes, roasted sweet potatoes, zucchini chips, and occasionally cucumbers and celery with ranch (we make it w/ Greek yogurt).

    ETA: He loves pumpkin pancakes and this vegetarian chili as well, and will eat almost any vegetable with eggs and cheese.

    Here too!

    DD is also crazy about eating right from the garden. She'll eat the normal things like sweet peas, green beans, and cherry tomatoes, but also things that are a little weird... A big leaf of lettuce in her hand... Green onions!! Yuck!

  • DD LOVES kale chips.

    She also loves sweet potatoes and parsnips.  We roast sweet potatoes, carrots, and parsnips all together in the oven with half an onion, a garlic clove, and I season it with a little salt and pepper or sometimes cinnamon.  It's so good.

    I wish DD ate more raw veggies.  I am trying but she just doesn't want anything to do with them right now.  She tells me they are "too hard".

  • Wow you ladies are lucky!  I'm lucky if I get them to eat broccoli n cheese.  The only thing they'll eat is sweet potato fries.  I'll also sneak kale in their smoothies.  I've tried alot of things too.  I know I just gotta keep trying.  But it's getting exhausting.

  • DD isn't a HUGE vegetable eater. 

    She loves carrots, frozen peas and corn
    We do "monster shakes" which are spinach, banana and pineapple. She loves helping make them.

    She likes the idea of: tomatoes, bell peppers and broccoli (but won't eat them) She likes to pick them up, hold them--ask for them at the store, etc. 

    She doesn't really like any cooked veggies.
