Quick easy recipes

Help! I need quick and easy dinner recipes. I'm reaching the end of a twin pregnancy and running out of good dinner ideas that I can make easily. Anything with a short prep time that cooks quick is wonderful. Crock pot meals and roasted meals that only take a little prep are also good. I don't care how long it stays in the pan, as long as I don't have to baby-sit it too much.

  • One of my favorite go-tos is crockpot chicken parm. Brown a few chicken breasts then put them in the crockpot w/ a jar of pasta sauce, sliced onions and mushrooms (opt). Cook on low for 6ish hours then sprinkle w/ shredded mozzarella and parmesan and cook for another half hour uncovered. Serve over pasta. It's really good and easy!

    I hear ya on not wanting to cook....I remember being so exhausted toward the end right before my twins were born....hang in there and best of luck on their upcoming arrival!

  • My favorite is chicken enchiladas. It's not incredibly fast, but it's pretty easy to throw it together.

    I cook a pound of chicken in the crockpot on high for 3 hours then shred.

    Mix chicken, beans (I used refried but black could work too), a 8oz pack of cheese, and a can of enchilada sauce. Put it into 8 taco shells in a 9x13 pan.

    The sauce is 3tbsp of butter mixed with 3tbsp of flour on medium high. Cook until brown and add in 2c of chicken broth. Leave for 6mins occasionally stirring. Put in 10oz of sour cream until it's mixed in.

    Put sauce on top and put cheese on top and cover with foil. Bake at 350 for 28 mins and uncover to broil for about 5 or until cheese is brown. It's super tasty :)

  • Fajita chicken is super easy. Cut some chicken breasts into strips, cook until no longer pink, toss in a fajita seasoning packet and water, and stir until fully cooked. You can serve it with veggies and/or rice, stick in it a salad with tortilla sticks, or make wraps.

    You can also cook a double batch and refrigerate the leftovers for a few days. Then shred it for tacos or use it in other dishes.
