My apple pie is decent, but not spectacular. Apple pie (with cheddar) is like an art in Vermont and I haven't made enough of them to consider myself proficient. I make great pie crust though. And the best pumpkin pie ever. Seriously. I'm not kidding. It's my most often republished recipe.

Thanks @Mapleme! I think I'll have fun playing with that .... I can't remember if we get fresh pumpkin around here. I've heard it used to be impossible to find canned. The Brits think we are crazy for having sweet pumpkin pie, because to them it's a savory vegetable. Maybe I'll do sweet potato if I can't find pumpkin.

Yes, as can most any winter squash. The consistency will change depending on the squash, but the flavor will be similar. I'd hazard to say that I like the pie with butternut squash better than with pumpkin.
I've heard that most people do, actually, but they feel so sentimentally attached to pumpkin that they have a hard time switching to butternut things.
DH tried pecan pie for the first time a couple of years ago. He was blown away by it. As a kid, he always thought it was a pie filled with a bunch of dry nuts. LOL. He had no idea it was a delicious butter and sugar bomb.

LOL. If you recall, last Thanksgiving I literally lit my sweet potato pie on fire while "toasting" the marshmallows

That sounds like something J would say... I always tell him that I'm not making it for him and he doesn't have to eat it
I suck at making food that DH doesn't like. He doesn't have a problem with me making food just for me and he'll even tolerate some things on occasion, but I love sharing food with folks who love it. So I rarely make things with mushrooms, squash, or dark leafy greens any more. Cabbage is funny though. He says he hates it and makes a face every time I add it to something, but enjoys what I make with it every time. So I keep pushing that envelope.
Ha! Same here! I tell him he doesn't have to eat it, but he always does. He also almost always really loves it. If I know that he hates something, I won't cook it when he's around. I'll generally also make a meal that's not my favorite if I know J likes it rather than one that I like that he doesn't care for,
