KA ice cream attachment

For those of you who have this attachment, it's just basically a bowl that you put in the freezer and it gets really cold, right?  Plus the beater mixes a little more thoroughly?  Is there any reason I couldn't rig something up that would hold ice + rock salt against the bowl to the keep it cold old school?  And maybe buy one of those beaters with the rubber scraper edge?  I'm so cheap and I'm having such a hard time pulling the trigger on an $80 bowl. Plus I hate having to plan ahead and put the bowl in the freezer for however long before I use it.  My freezer is TINY.  I'm thinking maybe I could sew some PUL that would fit around the bowl with elastic at the top to keep it contained?  Am I crazy?

  • I will say that, yes. It is essentially a bowl you stick in the fridge and a churning tool. However, the bowl is like a double boiler with some sort of liquid or gel in the center. This thing gets so fricken cold. I've had some ice cream bases freeze on contact where I had to hand churn it before the machine could. Plus the churning tool churns all the layers, not just scrape the sides. If you don't want to buy the attachment, then go to Wally World and buy a cheap ass motorized old school one. I've picked up one there for under 40$ like that.

I've thought about picking up an actual ice cream maker, too, but I loathe the thought of having another freaking appliance.  I'm not even enthusiastic about having another KA bowl to store.

  • But guise...they used to use ice and rock salt before the gel stuff.  The gel stuff is not a prerequisite for making ice cream.
  • ITK, will you just overnight me some Heath Bar ice cream on dry ice?  I'm cool with it as long as it doesn't actually touch the bodies.

I don't think you can rig something up yourself. I have the ice cream attachment and I love it. It definitely has some chemical freezey stuff in it. It's about an inch thick. It is super duper cold! I think I bought mine with a coupon at Macy's so it wasn't too pricey. I love it!

Now the challenge this year is to see if I can make coconut ice cream. Can anyone share some tips?
I've never tried making coconut milk ice cream, but I have a fancy schmancy ice cream cookbook MIL bought me. It says to be sure to use coconut milk from a can, not the milk carton. It also says the best brands are from Thailand labeled Chaokoh. Also do not substitute heavily sweetened COco Lopez or products labeled cream of coconut.

@stoneycakes‌ and @mapleme I have the Cuisinart maker. I love it. It is kind of a pain to remember to freeze the bowl before I use it, but now I just put it in when I make my grocery list and know I'm planning ice cream. Wal-Mart has it for like $50.

I have no opinion on the ice cream attachment, but I do love some Michael Buble' . I saw this video once of him at a concert letting a 12 or 14 year old kid up on stage to sing with him. He was really cool, so that just sealed the deal for me.

  • You can't store the ice cream in the mixer.

It's totally worth it to me, but I also have a separate chest freezer that I keep my bodies ice cream maker in.

Yes to the bolded. When I took a cooking class in Thailand this was the brand the chef recommended. It comes in a brown can with a picture of a coconut on it.

Now I'm wanting an ice cream maker. And I don't even like ice cream that much (maybe that should be in the UO thread).

  • I have a cuisinart ice cream maker and I think it was like 30 dollars when I bought it (but that was like ten years ago so don't quote me) same kind of deal where the insert goes in the freezer. It's also not enormous.

Thanks @CLLDLL I am going to look into this. I had never thought of using canned coconut milk. I was imagining using the regular carton stuff that I drink. Good to know.

@charmingthemoon‌ Read the ingredients too, you want one that's just coconut milk, not added carrageenan and other junk. They won't be as creamy and make an icier product. Speaking of icy, there is a lot of water in it, so it has a tendency to get icy. It tastes best when you first make it. Using honey instead of sugar will also help the texture. Maple syrup works too.

ETA: I use the recipe from the civilized caveman and jazz it up as I see fit. Canned black cherries and enjoy life chocolate chips is my favorite.

@TJ1979 I've never heard of Civilized Caveman, but I just looked it up. I'm totally going to try this recipe here for chocolate coconut milk ice cream with honey. Thank you!!!

Oh, that sounds simple and delicious! Let me know how it is!

  • I lost my ice cream maker about 4 moves ago. Somehow it just never showed up.

I've been thinking it might be fun to try one of those ice cream balls like they sell at camping stores. Supposedly you put your ice & salt in an outer layer, put your ice cream mixture in the center, seal it up, and toss/roll it around for about 20 minutes and you have ice cream. Could be fun for the kid or the dog to play with and do the work.
  • @Mapleme‌ what did you use for homemade? Little Tupperware inside big Tupperware? I was just looking online and the balls are way overpriced here!

Maybe it's another thing to ask MIL to bring when she visits next month...

We got one as a gift. We have used it a couple of times when we were camping. It takes a long time and the ball is heavy. I wouldn't want to throw it; it might crack or hurt someone.
