I've been wanting to learn to make homemade soups. I figure I finally have more time for cooking so I'd love to get some recipes to try out. Top of the list is the Olive Garden minestrone soup. Please share your favorite soup recipes, I need some inspiration.

Does chili count? I like this chili recipe from Rachael Ray - uses turkey so it's a little healthier and if your kids like BBQ sauce, it has a strong BBQ flavor.

This is not complicated but with strawberry season here it is a great fast soup to make. My kids just call it smoothie in a bowl.

Lentil Soup- ignore the grains of paradise (an obscure spice) i like to serve it with black pepper, a sprinkle of red wine vinegar, and parmesan cheese
Chicken Soup with homemade stock- simple but delicious. add chopped fresh dill or a sprinkle of turmeric when serving for something different
French Onion Soup- I make it with all chicken broth
Gazpacho Toledano- a delicious cold soup for summer. makes a lot and keeps well, great for an appetizer
Sautee 2 cloves of garlic, a small sweet onion, carrots, and celery (all chopped) in some olive oil. Add a carton of chicken broth and a large can of diced tomatoes (I use San Marzano when I can get them. I also add a medium (10oz?) can of tomato sauce, basil to taste, and some red wine. Then I add a can of kidney beans (drained), a chopped zucchini, and mini raviolis that I find in the refrigerated section of the grocery store. Let it all cook. It freezes really well. DD2 loves it - can't get enough.
Sorry the amount are vague - I just throw in whatever I have. It's different every time I make it. And it's really easy once you do all of the chopping.

Melt some butter, saute some crushed garlic in it. Add a carton or 1 1/2 cartons chicken broth, bring to boil. Add tortellini. Boil only a couple minutes, then add 1 package frozen chopped spinach (thawed, or thawed enough to break into small pieces) and 1 can stewed tomatoes. Break up spinach & tomatoes as they cook. Serve topped w/ parmesan cheese.
K3am I have to ask you though, slicing raw sausage is way harder than removing casings....??? All you do is literally squeeze the raw sausage & the inside squirts right out, then you brown it & break it up like ground beef/turkey.
