What kind of cheese are you giving your LOs? I saw cubes of cheddar at the store but wondered if that might be too strong. Do you give regular American? I've found that finding full fat cheese is also a mission!
American cheese in a grilled cheese sandwich, shredded cheese of every kind, string cheese sticks, cheddar snack sticks, cottage cheese. She loves cheese, so I just make sure I don't give it to her every day. I have never worried about the fat content.
LO has had cheddar, American, gouda, monterey jack, and mozz. She likes them all. The only one I'm staying away from is blue, but that's because of my own aversion to it.
American, cheddar and mozzarella so far. She had a hard white cheese once. Not sure what it was, but she liked it. I would give it to her and let her try it.

My LO loves the Mini Baby Bell cheese, the one in the red wax. She also eats american and shredded cheese (usually the "Mexican blend" we use for quesadillas and tacos).
She loves all of the cheese that I eat, although I don't give her jalepeno or pepper jack. I think her favorite is probably Colby. I have some pesto colby right now that she goes nuts for.
