Could you do something like wraps, quesadillas, or sandwiches where you prep all the ingredients during the weekend (wash and cut up veggies, etc.) and then take about 5 minutes to assemble it around lunch time? I also love hummus wraps, fruit, yogurt, cheese (those little baby bell cheeses are good), carrot sticks, and hard boiled eggs.

Another idea is to cook a lot of something like rice or quinoa, veggies, and chicken breasts and then have that with different sauces or other variations for lunch.

Or Costco or other stores have pre-made things like chicken salad, other salads, pimento cheese, sandwich trays, cooked shrimp, etc.
  • My method is letting my oldest make lunch:) The older kids can definitely make or at least help prep. Cooking is always a good and helpful skill to learn.

We do the same as PPs. Lunch includes a bunch of fresh veggies and fruit. It's easy to prep and refreshing on hot days. We also use leftovers to make wraps. Chicken in the crock pot can be shredded for bbq, taco and salad wraps. Cold pasta salads are easy to make ahead of time.

  • DItto @KlondikeBar. My almost 7 year old thinks hes a chef and has started making the boys lunches for school. It's awesome.

Make a big batch of PBJ and put them in the freezer - think uncrustables. We like to do things like Make Your Own Lunchable day....saltine crackers, ham and cheese pieces. That's super fast to make, or you could put it out on a plate and let them put their own together.

I will preface this with the fact that I have a 15 month old, so not much help with older kids. I make her batches of turkey veggie meatballs and baked breaded chicken tenders and freeze them so we have them on hand.

Sometimes we also do ham and cheese or grilled cheese or even
    eggs.

  • What about a DIY pizza bar one day? Boboli makes mini pizza crusts, let them "decorate" their own pizza with veggies and cook. There should be enough left over for the next day too if each kid does their own.
