I like it. The cheese association doesn't bother me. IRL I have only known girls named Colby (both in their late 30's). I much prefer it spelled with a C.
I used to watch All My Children and fell in love with the name Colby because of it. I'm not sure if I would ever use it personally, but I definitely still like it.
I know a couple of little boys with the name Kolbe, named after St. Maximilian Kolbe. I like it! You don't get the cheese association with that spelling either.
The actress from HIMYM is actually Cobie, short fot Jacoba, not Colbie. I don't think cheese, because I don't like cheese, but Colby is not good IMO. It sounds very cowboy to me. If it's the name, though, definitely spell it with a C.
