Re: WFD Wednesday

  • Tonight we'll either have leftover black bean burgers or a vegan BLT - something easy. Homemade oven roasted fries or grilled corn (or both) as sides.

For lunch, I'm eating the carrot and white bean sald with fresh dill that @ball.and.chain posted last week. Used cannellini beans. Grocery was out of shallots on Sunday, so left those out. I also cut back on the oil and steeped some crushed garlic in the lemon-oil dressing before mixing it in. I also used brown sugar and mixed the entire mixture with farro to make it a bit heartier. Only took a taste last night, and it was very good! Looking forward to lunch today!

  • Dinner... Hmmmm... Something with chicken, probably.  That or maybe I'll make grilled cheese and soup.  That sounds pretty good, actually.  I'll try to talk C into that ;)

GTKY: Oh, gosh, this is really hard... we have a lot of amazing restaurants in my home town.  I think I'll have to go with a blue flame burger with fries from Upland Brewing Company, washed down with a wheat beer, of course.  C and I had considered moving a few years ago (SO glad we didn't) and we both were lamenting how difficult it would be to leave Upland behind.

Stir fry with leftover Chinese food. Easy and simply, which is what we need these days.

Also, wife woke me up at 2 a.m. b/c she was hungry, so I feel like having lots of leftovers is good these days.

QOTW:  Everything bagel with lox spread, definitely.  You can get them elsewhere, but they just aren't as good.  Other option - bacon, egg and cheese sandwich from a cart on the corner.  Sadly, the guy who runs the cart on my corner keeps Halal, which means that he uses beef bacon instead of pork.  Its just not as tasty.

    Love.

Oh how I miss NYC and the food (you're from NYC, right?).

For me the hardest to do without is NY chinese food.  You just can't find it out here in MN.

Tonight I have softball, so Gabe is getting leftover chicken and spinach out of a tupperware at the field, and I will get whatever I can scrounge up once I get home.  It will absolutely include a beer.  Sorry, I know this isn't at all helpful for others ... no recipes, etc.

  • I'm planning to make black bean burgers from @ATXmommas recipe, a salad if the lettuce is still good, and curly fries.

QOTW: Chicago style pizza, for sure.
    ****loss discussed*****

We're queer. I'm 33, have severe stage 4 endo, and had both fallopian tubes removed. My love ("Manada" on the boards, 32) was diagnosed with diminished ovarian reserve. We did Partner IVF (my eggs, her uterus). We lost our twins Tavin and Casey at 21 weeks gestation.

    Our IUIs
with @Manada: IUI# 1-7 (December 2012- September 2013) all BFN. Tried natural, femara, clomid, puregon/follistim, clomid and menopur combo, both the ovidrel and HCG triggers.

    Our IVFs:
IVF #1 my eggs November/December 2013: Cancelled IVF due to poor response

    IVF #2 my eggs/Manada's uterus January/February 2014
BCPs and lupron overlap Stimmed: 1/22-2/2: Bravelle and Menopur (dosage ranged from B300 and M150 to B375 and M150 to B300 and M225)
2/4 retrieved 10 eggs. Endo was much worse than expected. Only 3 eggs fertilized; February 7 transferred two day 3 embryos, froze one. All great condition.
    BFP eve of 6dp3dt; Beta 1 (11dp3dt): 110; Beta 2 (13dp3dt): 175; Beta 3 (15dp3dt): 348; Beta 4 (19dp3dt): 2222; Beta 5 (21dp3dt): 4255

***July 18, 2014 we lost our beautiful babies at 21 weeks gestation. They were born too early. Tavin Sara T. and Casey Elizabeth T. are beautiful and precious and we will love them and miss them forever.***

No idea what is for dinner. Plans just went up in the air (I was supposed to go to dinner with friends and L was picking up the kids/feeding them, but my dinner plans fell through and I made a last minute eye appt since my contact is driving me nuts and I am out of back ups.) Maybe a Lean Cuisine or similar.

There is a BBQ sauce from my hometown that I grew up eating. I found it up here 1x and bought it and never saw it again. When I cooked with it, my house smelled like my childhood. mmmm.

  • I forgot the question of the day!

Well, I don't eat any hometown food from my home state of Missisippi anymore as absolutely nothing is vegan friendly. But, I'll still recommend fried catfish as a MS specialty. I used to love it! Along with any variety of soul food - fried okra, collards, macaroni, and banana pudding.

ATX must-have is breakfast tacos. And Mexican martinis are another (liquid) treat not for the faint of heart. :)

  • Grilled chicken sandwiches with lettuce, tomato and cheese.  We had stuff to get rid of and they were delicious!  Roasted broccoli on the side.

QOTW: Boston food and New England food are sort of interchangeable.  So: lobster rolls, clam chowder, and fried whole-belly clams.

  • We are eating yellow curry with chicken.  It'll be tasty.  I'm really, really excited about a salad I made for tomorrow: lentils with fried tofu cubes and a peanut Thai sauce.  It has cherry tomatoes and basil, too.  So tasty and marinating right now!

QOTD: I'm in Hawaii right now, so I'll say that I really, really love poke bowls.  It is seasoned ahi over rice.  So good.  When I get back to Oregon, I'm going to miss it.

"Things separate from their stories have no meaning. They are only shapes. Of a certain size and color. A certain weight. When their meaning has become lost to us they no longer have even a name. The story on the other hand can never be lost from its place in the world for it is that place.” ― Cormac McCarthy, The Crossing

  • @CageyMack‌ - would love the lentil and tofu recipe. Sounds wonderful!

  • @ATXMommas, forgot to say I hope you enjoyed the salad!  Farro is a great idea.  And I reduced the oil too -- I'm no fat-phobe but it seemed like waaaay too much.

I did! Agree about the oil - even after reducing the amount and mixing in the farro, it was plenty of dressing. Will definitely make this one again. I love how easy it was.
