over the weekend i made: -america's test kitchen chicken tagine with whole wheat israeli couscous- had this for dinner saturday but still have leftovers -2 pizzas with whole spelt crusts- one with turkey pepperoni, onions, and peppers, and one with -salsa, cheddar, and onions and peppers- had this for dinner sunday but still have leftovers -pinto beans with fire roasted tomatoes -whole wheat israeli couscous salad with the rest of the huge batch of couscous- with oil/vinegar/italian seasoning, kalamata olives, feta, cucumbers, red onions, and red peppers -got some mac and cheese made with whole wheat pasta from my mom
so hopefully that will last us through wednesday for lunches and dinners. clearly i did not relax as much as i should have on mother's day.
No real meal plans, but we do have to cook pork chops this week. (They were supposed to be for Mother's Day, but the plague running through our house turned it into nothing but good intentions.)
Anyone have a good pork chop recipe? The one MH was thinking of takes 2 hours to prepare, and we need something quick!
This is a staple in our house (and one I'm making this week).
@k3am easy porkchop recipe for us is simmering the porkchops in a mix of white vinegar, rock salt, pepper, garlic. Watrt leel shld just be slightly above the porkchops only. Once the mixture has evaporated - around 20 mins i think. I get the pork out. Dry it on paper towels and deep fry the pork. Very sinful but IMO, so yummy and ok once in a while. Hth
