I'm taking advantage of your cheese knowledge before you become way to busy for me, haha. Where's a good place to start? I checked out that New England cheese making website and they sell kits. Should I buy a kit to start or just pick an easy cheese and get the ingredients for that one? Any books to recommend? Also, I remember you saying something about aging your cheese in a wine fridge. Do you do that just because you have room in it or can you adjust the humidity in it or something?
