i also like to grill a bunch of vegetables over the weekend to use during the week.
i often chop up grilled zucchini, eggplant, red peppers, onions, and mushrooms, and add them to a jar of trader joe's organic marinara with some fresh basil. then we have it with pasta and parmesan.
my other favorite summer food is margaritas.
We also grill burgers/veggie burgers a lot.

Super easy to make and great for a BBQ.
Mushroom swiss burgers: sautee baby portabello mushrooms in a bit of butter, salt, and red wine or Worcestershire sauce. When finished, let cool. Chop swiss cheese, or get shredded swiss. Add mushrooms and swiss to ground beef (I usually use ground sirloin) and form patties. The patties freeze really well, so I usually make a ton and pull them out of the freezer all summer.
