Advice on doing a quick/basic Will?

I'm ashamed to admit my husband and I haven't updated our Will. We are taking out eldest son out of town and leaving our youngest with his grandparents. We are flying and will be gone 2 weeks. I have written a letter and had it notarized concerning authorization for medical treatment, but is there anything I can do about leaving instructions should anything happen that incapacitates us? Like, can I just write something up and get it notarized stating we appoint someone specific to take over the care of our son should something happen to us? Thanks!
