I think it's weirdly edited and she's just bringing the whole knife up with her hand.  Because you can't see the handle either before the blade appears.

Maybe the blade comes up out of the handle, then?  Because her thumb is in the back, so it can't be flipping up that way.

I think it's just the frame count. If you look at the blade, the tip is clearly pointing down. It probably just switches out so fast that the gif doesn't catch it.

Yeah, I'm definitely right. If you look at the person walking in the background, look how choppy the motion is. We're just missing the frames where the blade is out.
