I need meal ideas

We are in the middle of a kitchen renovation and I need help coming up with some meal ideas without a stove.

We have our microwave, an electric skillet and slow cooker we can use. Mostly we've had salads and take out though.

chicken and dumplings
baked ziti
breakfast casserole
Whole roasted chicken
Lo mein (chicken, beef, pork, or veggie)
pulled pork or chicken
moroccan lamb
beef stew
mac and cheese
chicken noodle soup
meatloaf (beef or turkey)
meat balls (beef or turkey)
stuffed peppers
stuffed pork chops

If you want any of them just let me know All are one dish wonders, require nothing but the crock pot, and occasionally rolls or tortillas.
