NBR: cold dinner ideas?

I'm starting to realize that I probably need to start taking/eating dinner at work. I don't get home until 8:15 (soon to be later) and my time with LO is spent shoving dinner in my face standing up, then trying to lay down with her on an unsettled stomach.

I need some ideas for a filling enough dinner that can be eaten cold or room temp. I have access to a fridge, but don't want to spend time using the microwave (I'll eat during my last pump break). Any ideas?

(FYI, I may XP to WM)

ETA: I also eat lunch and sometimes breakfast at work (leave at 6am), so hopefully I can get a little variety in what I take between those three.

    honestly I would probably have a snack during the last pump... like a granola bar, or hummus and carrots, and then eat after you put LO down.  This is what dh and I do since we both work relatively late. We don't eat until about 9 most nights. 

    Here are a few things that are good cold... 
    • salad with tuna, or chicken; 
    • I make a hummus sandwich with a pita pocket, hummus, spinach, carrots, cucumber, whatever veggies I have around (just keep the hummus in a separate container until right before you eat)
    • there are thermos' that do a pretty good job of keeping things hot if you put them in hot... maybe you could heat the soup in the morning and then have it for dinner hopefully still warm? same for chili or stew (not sure they would stay warm quite this long though)
    • bagel sandwiches
    • cereal
    • pasta salad/potato salad
    • hard boiled eggs

  • @amief Eating after she goes down sounds like a great plan, except that she still nurses to sleep in bed next to me (and I usually fall asleep before he unlatches).

    Sounds like I might have to go the sandwich route. I don't mind, but I'll have to load up on the veggies this summer to make it extra tasty. Maybe if I do dinner leftovers for lunch, a sandwich won't seem so boring for dinner.

  • Depends if you like it cold of not- but I like to make a veggie pizza on wheat crust and take that for lunch. Some other ideas that you could make ahead of time-bean salads, grilled chicken sandwich with avocado, salad with a scoop of tuna, turkey chilli (this is another weird thing I like cold, with tortilla chips like a dip).

  • Pp gave some good ideas. I'm wondering though, what kind of job you have that has you away from home from 6am until 8:15pm? How many days a week do you work?

    I make a wrap with strawberries, mandarin oranges, grilled chicken feta and spring greens. It's good cold.

    I'm an RN with a 30 minute commute each way. I work 3 days a week, so it's not as bad as if it was every day, but it still sucks basically not seeing LO on my work days :(

  • Greek salad with chicken. Bring the dressing in a separate container of course.

    I enjoy cold leftover spaghetti, I don't know why but it tastes better right from the fridge.

    Crackers with meat and cheese

  • I eat PB and honey on wheat toast!
