I have a bunch of disparate leftovers that aren't enough to make a meal out of, so this afternoon I turned them into stir-fried noodles.
DH is on another one of his trips, so he left us with some gnocchi and tomato sauce for one night, and some lamb for another night ... I still have make side dishes, but the time-consuming parts of those meals are already done.
Last night I grilled sreaks, so since the grill was on, I also did hamburgers, chicken breasts, hot dogs, and smoked sausages, to use in things the rest of the week or freeze.
Monday was Steak. Last night was Teryaki Duck and Rice in the crock pot with Duck that was slaughtered Sunday. Tonight I have a whole chicken and pesto but I'm not quite sure how to combine them. Suggestions? No idea for tomorrow night. Friday I hope MH gets the ribs and some more duck in the smoker. We are still mostly eating whatever we can find at night. There is just not enough time by the time I get home to put something together. Hunter is still not eating more than 7-9 ounces at daycare and is loading up when we get home by nursing all evening.
Smoked Gouda and broccoli crustless quiche. I made it while DS napped this morning so we can reheat easily tonight. Our hens have been laying up a storm and I needed to make some room in he fridge. The quiche smells amazing and I want to tear into it now!
@linewifekat: it's like a pancake you make in a cast iron skillet in the oven. The mix is super easy (see link below). I usually top with blueberries or fruit and some lemon juice and powdered sugar.
Hmm. Sunday we did a big Easter dinner, so ham, sweet potato casserole, green bean casserole, rolls, and jello. Thursday leftover greek salad and rotisserie chicken Friday we need to use some ground turkey up - dairy free and gluten free ground turkey ideas anyone? If not, it'll be tacos I'm sure.

@TJ1979 What about cabbage rolls? I make mine in an Italian type tomato sauce. You make little meatballs then roll them in cabbage leaves and then bake in the tomato sauce. It's the only way my husband will eat cabbage. Some recipes I've seen has rice in the meatballs.
@linewifekat That sounds yummy, but is it difficult? All the cabbage roll recipes I've seen seem quite labor intensive. Tomato sauce is a little iffy for me with the heartburn these days. But that seems like something that definitely needs to be part of our repertoire post-baby.

When DH is out of town, my menu plan basically falls apart, so we often end up making a big meal and eating that about three times.
This week I made roast beef for sandwiches on Sunday with sweet potato fries. We did that again on Monday. Yesterday was a tuna steak with tortellini and pesto. Tonight is roast beef sandwiches again. I have no idea what we're doing the rest of the week, but I'll probably make pizza on Friday.

It's not too hard. I just season my meat mixture and pull the leaves off and do a quick steam in the microwave with a wet paper towel then roll the meatballs with the leaves and put them in my enameled cast iron pot with a 28oz can of crushed tomatoes that I've seasoned. Then bake at 350° for 45 minutes.
I think I've convinced myself to make them tonight

Our list is weird this week. We have some normal meals and some paleo meals to try to ease my roommate into it (his doc put him on it due to his lack of gallbladder). So our list of meals are:
Sautee chicken, noodles, veggie
Whole baked chicken, mashed potatoes, and gravy
Burritos
Hotdogs
Spaghetti (Both in regular noodles and veggie noodles)
Sloppy Joes
Whole Crockpot chicken, cauliflower mash, and "gravy" (it looks tasty)
Goodness, I have been thinking about making cabbage rolls for days, but I haven't sat down and reworked the recipe. Now that you guys have me thinking about it, I guess I am headed to the store. I have also been obsessed with mashed cauliflower recently.
Now that I'm not pregnant anymore I'm trying like hell to lose those last 15lbs to have a healthy pregnancy next go round. The challenge? Low carb vegetarian foods! I think tonight we are going to try something like this:

We are having flank steak nightly thanks to a trip to Costco. Tonight I will make baked sweet potato wedges with cinnamon (if I can find it) and coconut oil.
